Kheer / Phirni

Popular sweet dishes, kheer and phirni are made by cooking broken rice in milk and sugar or jaggery. For phirni, fine rice pieces or flour may be used. The liquid is cooked till it has a thick creamy consistency. Green cardamoms (elaichi), raisins(kishmish), saffron, finely chopped pistachios and soaked almonds add rich flavour to this dessert which is served chilled.
