One of the most popular and tasty lentil dishes of Punjab, North India. Black lentils (Urad dal) sometimes mixed with a few kidney beans (Rajma) are well cooked in a pressure cooker. Butter, malai or ghee, whole chilly, chopped and cooked onions, tomatoes and ginger, and spices (garam masala) are then added and the dal is cooked for even longer till a rich creamy consistency is got. A blend of spicy, tangy and sweetness of cream is made in such a way that the dish has all flavours in a subtle yet perfect way.
